Blueberry Buckle Coffeecake

Tis the season for blueberries in my neck of the woods and recently we went picking, so my blueberry supply runneth over! After whipping up jam I still had plenty left, so I decided to start baking. After reviewing many recipes and variations of buckles, cakes and crumbles, I came up with a recipe I am proud of and the family LOVES!!! This Blueberry Buckle Coffeecake recipe is sure to be a family tradition. Dense yet airy, sweet but not too, just the right amount of crumble on top….. I promise, you are gonna love it as much as we do!

Cake Ingredients
2 cups of flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup softened butter
1 egg
1 teaspoon vanilla
1/2 cup milk
2 cups fresh (you could use frozen) blueberries

Start by preheating your oven to 375 degrees. In a bowl or stand mixer, combine all the ingredients, except the blueberries, and mix it up well. This is a VERY thick batter, so don't be shocked. Trust me, this is going to be the best ever! When the ingredients are well combined, use a spatula to fold in the blueberries. Be gentle as you do not want to burst all your berries!


Spoon the thick batter into a lightly greased pan and smooth it out to the best of your ability. It doesn't have to be perfectly flat. Now you need to make up the crumble that will go on top of the coffeecake.

Crumble Ingredients
1/3 cup sugar
1/2 cup flour
1 teaspoon cinnamon
1/8 teaspoon salt
1/4 cup softened butter

Whip up the crumble and sprinkle it over the top of your batter. There is no need to press it down, just sprinkle it on.


Now comes the best part, well other than eating it, pop it in the oven for 45 minutes and wait for your house to smell AMAZING!!! I was drooling waiting for the timer to go off the first time I made this recipe because it smelled so good I just could not wait to take a taste. Once the Blueberry Buckle Coffeecake is done (toothpick comes out clean) let it cool before digging in as the blueberries will be hot. Have a little self control and breath, I promise it is worth the wait!

  1. WOW I absolutely love blueberries! This cake looks AMAZING. I am getting hungry just looking at it! I am going to try and substitute a gluten free flour otherwise most of my family will not eat and i'll be forced to finish it all:) Anyway, I saw this on the link up sizzling towards sixty and I had to check it out.   10. I tried this recipe on my neighbors. we often swap baked goods. I have to tell you, YOUR coffee cake gave me a one-up and I currently hold the best baker in the building title! I don't normally share my recipes but it looks like I'm going to have to make an exception. most excellent ♥
