Fair warning though, these Chocolate Peanut Butter Bars are sweet! A little piece will satisfy that sweet tooth in a hurry!! I cut mine into one or two bite size pieces otherwise my hubby and the country kids would be on a sugar high for days!
1 1/2 cup crushed graham crackers (about a pack and a half)
1/2 cup of butter, softened
1 1/2 cup peanut butter
3 1/4 cup powdered sugar
12 oz. chocolate chips (one bag)
I use the blender attachment on my WonderMix Kitchen Mixer to get my graham crackers nice and powdery. But you can always use the tried and true method of putting the graham crackers in a plastic bag and use a rolling pin to crush them up.
Once your graham crackers are ready to go, mix them in a bowl with the butter, peanut butter, and powdered sugar. The ingredients will come together is a tacky yet crumbly type of dough.
Dump the mixture out on a large, ungreased cookie sheet with a lip. You need the lip on the cookie sheet to keep all the dough in. Now, press the mixture down HARD into the pan. You want it to compact! Pay close attention to your edges or they will crumble when you cut them later. Once you have pressed the dough down, pour the bag of chocolate chips all over the top.
Place your cookie sheet in a 350 degree oven so that your chips will soften and you can spread them over the top evenly. This should take less then 10 minutes. You don't want to leave it in too long or it will dry out your base.
Once you spread the chocolate, place the pan in the refrigerator to set up. Before the chocolate sets rock hard, take the pan out and slice the pan into bars. Like I said, I keep my pieces on the smaller side as they a sweet and no one needs a sugared up kid running around! Place the sheet back in the fridge to finish setting up. Once the chocolate is hard, you can transfer your bars to a air tight contain and return them to the fridge. I keep ours in the fridge, so that in the summer the chocolate doesn't get all hot and melty.
These Chocolate Peanut Butter Bars are a great treat and would make a wonderful gift as well! Bring them to your next family dinner or package them up as Christmas treat. I promise, these bars will become a family favorite!
