Easy Mexican Chicken

There are nights when you want a really good meal, but just don't want to stand around the kitchen chopping and preparing..... Well fear not, because I have a super yummy, easy peasy to make, tummy filling recipe for you!

While this recipe has some cook time to it, it is nothing but set it and forget it! So let’s get dinner on the table, shall we? We are going to make Mexican Chicken with just 4 ingredients. You read that right, just 4 easy to slap together items!

Ingredients

4 boneless skinless chicken breasts
1 jar salsa (your choice, we go mild)
1 (16 ounce) package Monterey jack cheese
However much rice you would like with it.

Place your chicken in a 9 x 13 pan. We line ours with foil for easier clean up. Now open your jar of salsa and cover the chicken breasts with it. Place a piece of foil over the top of the pan and pinch it down. You are going to bake your chicken breasts at 350 degrees for 25 minutes. Next REMOVE the foil and bake for 25 minutes longer.


Your next step to yummy glory is to cover each chicken breast with Monterey jack cheese. Don't skip!!! Smother those chicken breast!!! Let me tell you, the rice that soaks up all that salsa and cheese is going to be amazing. Now bake for 5-10 minutes more or until cheese is melted.


Serve your glorious Mexican Chicken over a bed of simple white rice. The rice will suck in all the yummy flavors. If you use Mexican rice, it competes too much with the chicken flavors. And trust me, you want to taste this flavor!

  1. I wonder if there would be enough moisture to cook your rice along with the chicken and salsa, for a truly easy one pot dish! Sounds yummy!

    1. I've never tried it that way. I doubt it though. The salsa is chunky and there wasn't much liquid in the bottom of the pan.
