I was really longing for some chocolate chip cookies recently, so I decided to play with a basic dough recipe to make it perfect in bar form. But then something went terrible, terrible wrong, or should I say right! When I went to the cupboard for the chocolate chips, I spotted some butterscotch ones right next to some white chocolate chips. That is when I rubbed my hands together and went "Muuuuhh haaa haa haaaaa!!!" And of course the littlest country kid looked at me like I had lost my mind... but back to the baking.....
Yes, yes I did put all three kinds of chips in my dough! But I had to get the right combination of flavors and I am happy to say, after nibbling different chip combinations, I nailed it! Just ask my neighbor, she needed a moment of silence as she chewed in bliss! So how does one make a Tri-chip Cookie Bar to die for? I am glad you asked!!
- 3/4 cup of butter (softened)
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 teaspoons vanilla
- 1/2 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 2 cups flour
- 1 cup chocolate chips
- 2/3 cup butterscotch chips
- 1/3 cup white chocolate chips (vanilla)
In a bowl, mix all the ingredients together, then add in the chips. I think we are all grown here so I will not say, cream this, or incorporate that..... just mush it all together. Heck grab your kids, make them mush it up! Now put the thick dough in a GREASED 9 x 13 pan. You will have to use your spatula to press it around. Bake at 325 degrees for 30 ish minutes. You know all stoves cook a little different. You will know the bars are done when they turn golden brown and pull away from the edges of the pan.
Let the pan cool before cutting. I know, I know, waiting is so hard to do when these are so good. Don't worry, it doesn't take long. Now grab a few and go hide in a closet. Trust me on this one. If the children know that you made them they will be all over you! And I apologize in advance for the addictive nature of these bars and the 5lbs you are about to gain from repeatedly making them!
