Pumpkin Roll Goodness

One thing I love about Fall is it puts me in a baking kind of mood. I have never dabbled much in the way of baking with pumpkin but I am learning VERY quickly I have been missing out by not embracing this ingredient sooner! So I am now on a pumpkin kick. When I started looking at recipes for making a pumpkin roll the one thing that kept troubling me was the part where everyone said to roll the cake up straight out of the oven. You can't roll cake!!!! That is crazy talk!!! So with a very skeptical attitude, I developed a recipe that had the "common" ingredients of most of them out there and I set to work.......

Cake
3 eggs
1 cup sugar
2/3 cup pumpkin
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon ginger
3/4 cup flour
1/2 teaspoon nutmeg
1/2 teaspoon salt

I combined the ingredients for the cake and put it in what everyone out there calls a jelly roll pan. Frankly it is just a cookie sheet with edges in my opinion. Make sure you grease and flower the pan so your thin cake will come out easier. Bake at 375 for about 12 minutes. Once the cake is done, I put powdered sugar on the cake (just brushed a little all over) placed a kitchen towel on top and flipped the pan over. The cake should release (tap if you have to) and fall onto the towel. Now why did I put powder sugar on the towel? So the cake wouldn't stick to it. I then brushed powdered sugar on the other side and began to roll......


And you know what? It worked!! Shut the front door!!! I set the rolled cake/towel to the side to cool while I whipped up the filling. 

Filling
1 cup powdered sugar
8 ounces (1 box) cream cheese, softened
4 tablespoons butter, softened
1 teaspoon vanilla

Slowly I unrolled the cake..... certain it would break..... but it didn't. I spread the filling over the cake and this time without the towel, rolled it back up. It worked..... no broken cake..... I was impressed. I then put the pumpkin roll in the freezer to set up a bit. Once it was firm enough to cut, I sliced the roll. I sliced the whole roll and place extra pieces between wax paper in a freezer bag, and returned them to the freezer for future use.



I presented my family with my latest attempt in the kitchen and it was meet with thumbs up all around. Okay, the littlest country kid doesn't know how to do thumbs up yet, but from his constant begging for more, I believe beyond a shadow of a doubt, he too loved it!!! So what are you waiting for? Go roll some cake and impress your family and friends!!!

  12. I love baking with pumpkin, I make all type of baked goodies with it. The first time I saw a pumpkin roll was on a holiday special on the Food Network. Paula Dean made it, and I raced to the computer to get the recipe. Pinning this to my dessert board.
